Recently I was gifted a bag of blue cornmeal. I often bake up corn bread or yellow cornmeal muffins but had never baked with blue cornmeal before. I found a recipe that looked good and changed it up by adding orange juice and zest. Blue cornmeal is not as gritty as yellow cornmeal and has a subtle flavour all it's own.
(yields 12 large muffins)
- 1 cup blue cornmeal
- 1 cup white flour
- 1/2 cup white sugar
- 1/2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- juice from 1 orange
- zest from one orange
- 2 eggs, beaten
- 1/2 cup butter, melted and cooled
- 1 cup fresh or frozen blueberries
- Stir together dry ingredients.
- Melt butter. While it's cooling beat together rest wet ingredients.
- Add wet ingredients to dry and stir to combine.
- Fold in fresh or frozen blueberries.
- Fill greased or paper lined muffin tins and fill to 3/4 full.
- Bake in 400º oven for 25 minutes.
- Cool in pan for 10 minutes. Remove to cooling rack.
