It's blueberry season and one of my favourite desserts using these sweet little berries in cobbler. I've added fresh pineapple to this recipe and I think it brings this simple dessert up a notch.
- 4 cups fresh or frozen blueberries
- 1 1/2 cup fresh pineapple chunks
- 2/3 cup sugar
- 3 tbsp corn starch
- Stir above ingredients together in a 9" square pan or pie plate.
- Microwave for 3-4 minutes to just begin to warm.
Topping:
- 1 cup flour
- 1/3 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 3 tbsp cold butter
- 1/2 cup buttermilk
- Stir together dry ingredients.
- Cut in butter until small pea size pieces.
- Stir in buttermilk.
- Top fruit mixture with topping.
- Bake in 425º oven for 20-25 minutes. Poke topping with a tooth pick to make sure cobbler topping baked through.
